Eddie's Fried Onion/Tomato Cod Fish.
Ingredients for 5 people:
A. One pound of premium spineless dried salted Cod Fish. B. Olive Oil. C. 2 large white onions. D. 2 ripe medium sized Tomatoes C. 1 packet of Sason Accent Coriander/Annatto Seasoning and 1 packet of Sason Accent Original Seasoning.
1. Preparing the Cod Fish:
This is for the real sun dried/salted cod fish. Take a large pot with water and boil the Cod Fish for 15 minutes over a high flame. Next drain out the water of the boiled Cod Fish, run over cool tap water and peel off any skin it may have and check for spines, make sure the cod fish is clean and free of spines. Next put fresh water in the pot with the boiled cleaned Cod fish and boil again for another 15 minutes, drain the water, let it cool off and break into small 2 inch pieces.
When the cod fish is the white fish type or other types of salted dried fish, only boil the fish once and rinse.
2. Preparing the other Ingredients:
Take the 2 large white onions, peel off the skin, cut off the ends and cut the onions in slices and then cut the slices in half and separate the onion pieces. Take the 2 tomatoes and cut them into 2 inch pieces.
3. Frying the Cod Fish Onion/Tomato mixture:
Place 5 large table spoons of Olive Oil into a large frying pan, add 1/3 of a cup of water. Then add the sliced onions, the cleaned boiled Cod Fish and the cut tomatoes. Then add the 2 packets of Seasoning mentioned above. Stir everything together and cook over a medium high flame. Let the mixture boil, stir from time to time and let the water evaporate. When the water is gone the mixture will start to fry, stir fry all the ingredients until the mixture is moist dry.
Serve hot with hot white rice, a nice salad with Italian dressing or stewed Puerto Rican red beans or both. Hmmmmm, good!
